Old Fashioned Chicken Pot Pie

Classic Chicken Pot Pie is made with a whole chicken, mixed vegetables, a homemade white sauce and baked in a blanket of flaky crust. While my daughter in law, Brandy, was on bed rest awaiting the arrival of our granddaughter, her friend, Rachel, brought over this delicious Chicken Pot Pie.

Baked Chicken and Dumplings

Baked Chicken and Dumplings has all the flavors of Homemade Chicken and Dumplings without rolling out the dumplings.  This casserole is truly magic dumplings! My husband loves my  Homemade Chicken and Dumpling recipe, and he was a little hesitant when I told him I was going to make Baked Chicken and Dumplings .  He could not imagine how they would turn out, and I must say I was a little intrigued too.

Chili Smothered Burritos {Using El Monterey frozen burritos}

Chili Smothered Burritos , frozen burritos coverd with sliced cheese and chili gravy then topped with shreaded cheese.  To make them a little spicy add jalapeno slices.   When my children were school age, Chili Smothered Burritos  were on our monthly menu rotation a couple of times.

Creamy Skillet Lasagna

Skillet Lasagna , one skillet meal including all the ingredients of a traditional Lasagna.  But this is a shortcut version cooking the hamburger, sauce, and soft cheese along with the noodles all together.   One fabulous skillet meal! The recipe for Creamy Skillet Lasagna has been floating around Pinterest for a while now, and I thought I would give it a try using ingredients I had on hand and make it for my husband.

Easy Beef or Venison Pot Pie {Using Pillsbury Pet-Ritz Crust}

  Beef or Venison Pot Pies,  a casserole under a crust my family describes it.  Long ago, the name  Pot Pie  came from cooking the filling in a pot on the stove and then pouring it into a crust to bake. Pot pies scream  comfort food at best!!  We are huge fans of pot pies around our house. You can make some of the best pot pies with leftovers.  One way to transform leftovers into pure goodness.

Crockpot Mexican Pot Roast {A flavorful roast that the whole family loved!}

Crockpot Mexican Pot Roast is a pot roast with a twist, made with spicy ingredients. Most grocery stores carry all the ingredients.  Just think of all the possibles for weeknight meals from burritos, tacos, enchiladas and the list goes on. Stew in a Pumpkin {Baked and served in a pumpkin}

Baked Pumpkin Stew  is a flavorful beef stew cooked and served in a sugar pie pumpkin. When serving, raise the ladle up with the stew scraping the sides of the pumpkin being sure to get a generous serving of pumpkin.     A true taste of Fall! To celebrate the Fall, pumpkin is so hot these days, and almost anything can be made with it.  When I grew up in the 60s, pumpkin pie and pumpkin bread were the most popular recipes to make. These days that is not the case.

Crockpot Roast New Potatoes and Carrots {Has The Flavors of a Classic Pot Roast}

Crockpot Roast New Potatoes and Carrots  are one of the meals I cooked a lot while we were in the hotel this summer as our house was being repaired. Cooking in the crockpot is more out of convenience for me than anything else, but in the hotel, we didn't have an oven so, the crockpot was perfect. I usually put my roast in the crockpot before I go to bed at night and cook it on low all night. Get up the next morning and turn it to warm. And two or three hours before serving it, I put the potatoes and carrots in and turn to high. Don't you just love these one pot meals!

Jiffy Chili Pie {Simply amazing how easy it is to make this!}

Jiffy Chili Pie , a one pot wonder satisfying the pickiest of eaters.  Great use of leftover homemade chili with your favorite cornbread recipe spread across the top. This Jiffy Chili Pie is one of the recipes that I made before Easter that I was not able to get posted.   As some of you know from reading my post on Facebook , we had severe storm damage to our house on Easter Sunday!   Many of the recipes I made around that time, I didn't get to post.   Jiffy Chili Pie is one of the recipes I made on a cold day that we had in March. You are going to be amazed at how easy it is to make.  I used some homemade chili I had in the freezer, chopped onions, and a can of green chilies. All of that was sandwiched between two layers of prepared Jiffy Cornbread Mix.  You can have a meal on the table in a "jiffy".   Just had to say that...he he!

Easy Crockpot Mandarin Chicken

Easy Crockpot Mandarin Chicken is just what it says Easy!   I have been seeing this recipe circling around on Pinterest and knew I had to give it a try.  I did make a few changes to our liking.  It will definitely be making a regular appearance on our menu rotations. I love the ingredients in this recipe and added a few of my own.  I added onions and bell pepper to give it additional color and taste. You could add mandarin oranges or pineapple, but we prefer it with just the vegetables. Either way the flavors explode in your mouth, and you can't stop eating it. I also love the fact that I can make it in a crockpot.  I have always cooked most anything in the summer so using the crockpot for me is more out of convenience than anything. The one thing that I most favor about using a crockpot is you don't have to watch the stove when you cook.  You can go about doing other things while your meal is simmering away. Yes, the crockpot is a real plus with thi

Spaghetti Pie

Spaghetti Pie is a delightful twist on a regular Italian dinner you serve your family.  As soon as I saw Lynn's recipe for Spaghetti Pie over at Southern With A Twist , I knew I had to make it.  She has a lot of people request her recipe, and for me, that tells me, it is a winner.  What drew me to this recipe is the ingredients.  They are as simple as mixing eggs, sour cream, mozzarella and parmesan cheese with spaghetti noodles, then spread in the bottom of a casserole dish. An easy meat sauce layered over the noodles, then topped with mozzarella and cheddar cheese.  How easy it that? The recipe make a huge casserole--way too much for just my husband and I, so the next time I make it, and I will be making it often, I am dividing it up in two or three pans. This recipe would even be great to serve for a fundraiser meal since it makes such a huge casserole.  Love these kind of recipes! My daughter's family came by just as I  was taking it out of the ove

Spicy! Crawfish Jambalaya {A Cajun dish that is sure to please your family and guest!}

Crawfish Jambalaya , a spicy Cajun dish full of vegetables and meat mixed with rice.  Traditionally, the meat includes sausage of some sort along with seafood like shrimp or crawfish. This weekend we had our yearly cemetery associate meeting aka family reunion which includes a potluck dinner afterwards.  I always try to take two or three things, and this year wasn't any different, along with the jambalaya, I brought Apple Dumpling Cobbler and a new recipe for Strawberry Pie Filling Salad .    There is always more food than anyone can eat, and the first thing I am looking for is new recipes from wonderful family cooks.  This year I came away with a wonderful recipe for Mexican Pot Roast . Jambalaya is a Cajun rice dish that may include a variety of meats and fish.  With Crawfish in season right now it was the perfect time for this recipe.   For the recipe, I used crawfish my Grandsons brought me that they had leftover from a Crawfish B

Healthyish Chicken and Rice {aka Healthy Chicken and Rice Casserole}

Healthyish Chicken and Rice, rice, chicken breast, and chicken broth and a secret ingredient bring this casserole in the category of a healthy dish. The motivation to make this  Chicken and Rice dish came about when I wanted to make my traditional Chicken and Rice dish that I have always made for years.   As always, when you have your heart set on making something, and you go in the kitchen and look in the cabinet to grab the soup and the onion soup mix, and there is none to be found, your words are---Oh My This Can't Be!   I am a huge fan of chicken and rice and have been ever since my mother made this dish for my birthdays when I was in college.    So my expectations are high as to a substitute of any kind. I had the chicken and the rice, so what next?  Just imper-vise is what I say---take it to a new level.    So I created a new healthy but rich dish that consists of chicken, rice, chicken broth, vegetable broth, and the secret ingredient Knorr's Classic V
