We have teenage grandsons and some big eater around our house when we all get together, so I intentionally cook plenty to have leftovers the next day.

Easy Baked Coca Cola Ham

Easy Southern Classic Ham all year around.  My Mother feels that the coco cola pulls some of the salt off and tenderizes the inside of the ham.  It also gives it a wonderful caramelization on the outside. Crustless Sweet Potato Pie {a classic way to use leftover sweet potatoes + gluten free option}

Crustless Sweet Potato Pie , basically a sweet potato pie that has no crust.  It falls into the category of the famous Impossible Pies that was the rage from the introduction of Bisquick in the 80's.   This past weekend I wanted to try out an idea I had with some leftover sweet potatoes.  As Thanksgiving is approaching, I know this recipe is going to come in handy. Don't get me wrong--we love our leftovers, but there is a thing about you can only eat so many sweet potatoes, so that is how I came up with making this pie.  

Frijole Bites aka {Homemade Mini Kolaches}

South of the Border Bites , a pastry that holds a spoonful of shredded cheese, pinto beans, and diced jalapenos.  Wrap up the mixture in a ball and lay upside down in a dish.  Brush with butter and bake.  Perfect bitesize bite!   The recipe for these South of the Border Bites aka "Kolaches" came about when I only used half of the dough from my Heavenly Cinnamon Rolls that I made on Saturday.
