Stuffed Portobellos {Another Great Recipe for a Brunch Idea}

Stuffed Portobellos , simple yet elegant for any occasion, baked with an egg in the center and garnished with green onions and salt with plenty of black pepper.  I am a huge fan of portabella mushrooms, and when I saw these,  Stuffed Portobellos on Pinterest, I thought they would be great to serve at a brunch.

Spring Brunch Recipe! Baked Hash Browns Cups

Baked Hashbrown Cups, easy to make and serve at your next brunch gathering.   Crispy on the outside and moist and tender on the inside.    I love to make big breakfasts for family and friends whenever I can, but it is not always easy to serve everything hot, especially when I want to serve hash browns. My husband just loves hash browns, actually he just loves potatoes cooked any way you can, so I try to make hash browns as often as I can.   When we were first married, hash browns were one of the first things he wanted me to make him for breakfast.   The only thing is, I had never made them before, and he led me through the process his Mother used.   When my husband grew up, his mother would make them out of leftover baked potatoes.   They actually bake more potatoes than they would eat, and then save the leftovers for breakfast the next morning.   He taught me to grate the potato, add oil to a hot cast iron skillet, and cook it until it was nice and crispy, flipped it o

Wow Your Valentine with this ~ Valentine's Day Breakfast For Two!

Making your Valentine's a lovely breakfast doesn't have to be expensive or time consuming.  Keep it simple and sweet! One of my husband's favorite ways to eat an egg, is an egg in a hole. To put a little WOW in this somewhat boring way to eat an egg, I decided to make Valentine's Egg In A Hole . Arn't they cute?   French toast is another favorite of my husband's. So I thought why not make some Cu te French Toast Hearts out of the little hearts from the egg in a hole---genius don't you think? I thought it was, although, I know there are others out there who have probably thought the same thing.  Shh, he doesn't know that! This breakfast in itself is gorgeous, but if you would like to put a little more WOW in this already gorgeous breakfast, serve some dipping chocolate in a  small bowl and fresh fruit.  We are having fresh pineapple, since that is my husband's favorite.  I know there are a lot of his favorite in the pos

Caramel Apple Cinnamon Rolls

Caramel Apple Cinnamon Rolls , easy homemade cinnamon rolls stuffed with grated fresh apples, cinnamon, and sugar and topped with a caramel icing.  Fall just got a lot sweeter!   There is nothing better! Starting your morning off with a cup of coffee and homemade cinnamon rolls will, sure enough, get your fall morning off to a fabulous day!

Simple Homemade Granola

You will never buy packaged granola ever again after you make Simple Homemade Granola .   All though, there  is a ton of variation you can make, the basic ingredients are the same.  The basic ingredients are cereals like oats, sweeteners such as brown sugar, maple syrup, or honey, and then you have some fats like butter or oils.  Then add anything you like to  give it some deliciousness and nutrition, like different seeds, dried fruit and wheat germ. The possibilities are endless, as they say. My favorite way to eat granola is in a Yogurt Breakfast Trifle . A breakfast trifle is simply layered fruit, yogurt, and granola. Why wait for breakfast.  Yogurt trifles can be enjoy any time of the day for a dessert or what about an after school snack.  Once my family gets their  hands in the granola, it so hard for them to stop eating it, so I make sure I keep the ingredients on hand in the pantry. One thing I have learned is that I can put a batch in the oven and cook

Homemade Grape Jam

Homemade Grape Jam, perfectly tart and sweet, this recipe is easy to make and delicious on biscuits, peanut butter sandwiches, and homemade pop tarts.   There are a few favorites I have when it comes to home canning, and making jam is at the top.  There is such a feeling of accomplishment when you pop open a jar of homemade jams and jellies.  Making jam is a lot of work, but truly a labor of love.   That is how I feel about the Homemade Grape Jam I made this summer.   By the time, my husband picked the grapes, and I processed the grapes to make juice, and then the canning, there is a lot of time invested, but so well worth it. This summer was not any different when it came to harvesting our grapes from our one and only grapevine.   When it was all said and done, my husband had picked 7 gallons of grapes, which brought 40 jars of jam.   This grapevine is large and has the best combination of sweet and tart grapes, which is the perfect balance to make jam.  You may think th

Overnight French Toast and Warm Honey Syrup {Celebrating A Birthday Breakfast!}

A delicious rich breakfast or brunch dish is prepared the night before, placed in the refrigerator, and then baked the following morning.  Overnight French Toast   I have been searching for the perfect recipe for some time.  I could not find one that wasn't like a bread pudding in texture.  This recipe is just as perfect as I wanted it to be. Texture wise, it is creamy, delicate on the inside, and tender on the outside-- being able to cut through with ease, similar to the perfect French Toast. Taste wise, it is absolutely scrumptious! Birthday breakfasts are another way to celebrate a person's special day.  On the first of July, my Grandsons, Luke, who turned 14, and Gabriel, who turned 11, wanted to celebrate their birthday breakfast at my house with their other cousins who were in town for the week. I asked Luke what he would like me to make.  He said, "just surprise me, Grandma"!  I made him this Overnight French Toast   dish with Honey Syrup , and a

Old Fashioned Peach Butter {Granny's Recipe}

Old Fashioned Peach Butter, fresh peaches slowly cooked with spices and sugar until the liquid has evaporated lending a smooth silky texture like soft butter.   Growing up in the '60s, all I remember was homemade jams and jellies on Mother's breakfast table.   It was a traditional event each summer to make Peach Butter from fresh peaches.  We would wash all the peaches and peeled each one, leaving a little of the peach with the skin, because that is what she would make her Peach Butter from.   Then she would slice up the peaches and put them in a pot on the stove and make peach preserves.   I rarely see them anymore, but she would also make Pickled Peaches that graced our table at Thanksgiving and Christmas.   When it was all said and done, the only thing we threw away was the seed.

Cream Cheese Biscuits

Cream Cheese Biscuits, fluffy and tender biscuits Southerners love to make.  We love them with honey, syrup, jelly, and even a piece of country ham nestled in for a quick sandwich treat.  Only three ingredients, self-rising flour, butter, and the star of the recipe–– cream cheese! Who would have thought a cookbook solely about biscuits would grab such an interest in me.  Nathalie Depree's Southern Biscuits cookbook did just that.   You can find every biscuit imaginable, from the traditional ones all the way to the outlandish ones.  She goes into great detail on all the ins and outs of making the perfect biscuit.   I have always been a big fan of her in her television days on PBS in the '80s, not to mention all of her many cookbooks.  You could say she is my all time favorite Southern cook.

Mrs. Little's Pickled Figs Recipe {A Family Favorite}

These Pickled Figs are an excellent addition to any relish tray, or you can serve them as an appetizer with cheese. You will find that they are rich in flavor and will change all your thoughts about how unappealing figs can be.   They have become one of the recipes we so look forward to making every year.  Jim's Mother has the fig tree, and as soon as the figs are ready to be picked,  we get 3 quarts to go into a big pot.  You cook them with vinegar, sugar, and pickling spice for 10 minutes three consecutive days. My children cannot wait for the third day when we put them in the canning jars.  I have to get them sealed up really fast because when they start eating them, they can't stop, and now the grandchildren are following right in with them!

Apple Walnut Zucchini Bread

Quick Bread is one of the first things that I learned to make in my first year of Home Economics.  Now you can tell how old I am. (he he)   I have to say, Home Economics was always my favorite class in my high school years, and interestingly enough, since I was in high school, that class has undergone numerous name and status changes.  Like the cooking part---the class I took is now totally separate and called Culinary Arts Class.  Historically, the class was mostly women, but with the serge in the culinary field, that has changed.  Quick Bread is a term used in making a bread batter that is made rather quickly using a leavening agent other than yeast.  Zucchini bread falls in that category. I am a big fan of fresh apple cake .  After I saw the recipe for Zucchini Bread over at Joy of Bak ing and she added an apple to her recipe, I decided to add grated apple to my recipe too.  This Apple Walnut Zucchini Bread reminds me a lot of Carrot Bread, but without the

Brown Sugar Banana Bread made with Sugar Substitute

Brown Sugar Banana Bread, rich caramel flavor provided by the addition of brown sugar totally compliments the bananas in the banana bread recipe. Are you a fan of Banana Bread so much so that you find yourself craving it and wishing you could make it with fewer calories?  That is how it is with me, so I decided to make one using  the recipe I make most of the time and substituting a Brown Sugar Substitute in place of the sugar. WHAT YOU WILL NEED TO MAKE BROWN SUGAR BANANA BREAD WITH A SUGAR SUBSTITUTE Butter Eggs Soda Flour Sugar Substitute (Truvia, Splenda, Pure) Bananas HOW TO MAKE BROWN SUGAR BANANA BREAD WITH A SUGAR SUBSTITUTE Preheat oven 350 degrees F.
