Sheet pan dinners have become a favorite around our house lately.  We love the ease of preparation and clean up, consisting of cooking the entire meal in a sheet pan.

During our cool spell here in Texas a couple of weeks ago, I had a hankering for some Chicken and Dressing after seeing a Facebook friend post that she was making some for her family.

Queso Macaroni and Cheese {Made from leftover queso.}

This recipe for Queso Macaroni and Cheese came about from having leftover queso that I made for a family get together.  It was just enough to spice up some macaroni and cheese.   The queso is the classic Velveeta and Rotel tomato recipe that is always a crowd pleaser.  I love having leftover queso to add flavor to breakfast casseroles, vegetables, and meat dishes so I usually make more than we are going to eat.   I hope the next time you make queso you will make this recipe for Queso Macaroni and Cheese.   It is easy and quick to prepare not to mention yummy too, and was an excelent accompaniment to the Baked BBQ Country Style Pork Steaks .  Enjoy!

Old School Cooking! Leftover Ham and Great Northern Beans {Granny's Recipe}

Leftover Ham and Great Northern Beans , cooked  on the stovetop in a big soup pot like my Mother cooked her's. A c rockpot is a great option to cook them, but remember they take less time to cook than pinto beans.  The upside--you get to enjoy all those juices quicker with a big slab of cornbread. Our Christmas ham this year was super delicious, and the first thing we always look forward to is cooking the ham bone in a pot of beans.  In fact, it never gets frozen. Straight to the pot it went with some Great Northern Beans .

Crockpot Mexican Pot Roast {A flavorful roast that the whole family loved!}

Crockpot Mexican Pot Roast is a pot roast with a twist, made with spicy ingredients. Most grocery stores carry all the ingredients.  Just think of all the possibles for weeknight meals from burritos, tacos, enchiladas and the list goes on. The holidays are just a few days away, and I wanted to share with you a great recipe to cook in a crockpot.

Easy Fried Rice {No Need for Take Out---Make it yourself!}

Asian food is one of my husband's favorite.  We usually eat it twice a month. It can be kind of pricey eating out, so I try to make our favorites at home. Easy Fried Rice is one of the dishes I  have started making.  It is as simple as it looks at an open grill in the Asian restaurants.  Start off with cooked rice and go from there adding what you want.  I usually cook the egg first in sesame oil and then add the cooked rice and vegetables.  This recipe is a simple and a basic one, but on occasion I dress it up with adding cooked shrimp, chicken, or pork.   Delish! This Easy Fried Rice goes well with these other Asian dishes I like to make---- Sweet and Sour Pork,  Sesame Noodles ,  Thai Style Stir Fried Chicken ,  Sesame Chicken , Pepper Steak,  Mandarin Chicken , and  Chinese Style Chop Suey .  As you can see, Asian food is a favorite around our house! Traditional Stuffed Eggs

Traditional Stuffed Eggs are as old as the hills in the south.  The traditional ingredients are mashed egg yolks, mayonnaise, yellow mustard, salt, and pepper with a little bit of minced  onion and minced pickles.  Garnishes are optional. As time has gone on, the ingredients have expounded to the hot and spicy and all kinds of fillers.  It is easy to create your own variations. The binder is usually mayonnaise, but sour cream, yogurt, and cream can be used.   The fillers should be more in ratio than the mashed egg yolks, and make sure they are minced so they are easy to scoop and fill in the egg white half.
