Weeknight Family Supper Meal: #5 Spaghetti Pie

The Weeknight Family Supper Meal is an inspiration for a meal that can be enjoyed any night of the week, offering ideas on how to prepare part of the meal ahead, how to freeze leftovers, and how to repurpose them into a new meal. With Valentine's Day next Wednesday, I thought you might like a meal for the special occasion.   When my children were small, we chose to celebrate the moment with them at the family table instead of a quiet, romantic meal just my husband and me.   I would set the table with fine china, crystal tea glasses, real cloth napkins, and, well, the silverware was our everyday fare. I would serve a one-pot dish, such as Shrimp Creole over buttered rice, accompanied by a green salad. For dessert, we would have chocolate cake.   Oh, the memories are flooding in.  sniff sniff!

Weeknight Family Supper Meal: #3 Chicken Terrific

Weeknight Family Supper Meal is  an inspiration for a meal one night of the week, offering ideas on how to prepare part of the meal ahead, how to freeze any leftovers, or how to repurpose leftovers into a new meal.    Casseroles are a favorite at our house, especially those that can be made ahead, stored in the fridge, and then popped in the oven when it's time to cook supper.   If a buttery topping is sprinkled on top, as this casserole has, leave it to sprinkle just before baking.  Look out for the leftovers.   We love this casserole almost better the next day.  It is scrumptious.   Did I say it is not like your typical casseroles?  The ingredients may surprise you.

Weeknight Family Supper Meal: #2 Leftover Ham with Bowtie Pasta and English Peas

Weeknight Family Supper Meal , an inspiration for a meal one night of the week that may include ideas how to make part of the meal ahead, how to freeze any leftovers or how to make leftovers into a makeover for another meal.   After Christmas, we always have plenty of ham leftover.  This Christmas was no different.  I usually buy a whole ham for Thanksgiving and a spiral ham for Christmas. I love to dice leftover spiral ham.  The cuts are all uniform and the perfect thickness.  They look pretty in ham salad or a pasta dish like Leftover Ham and Bowtie Pasta.

Dessert is a simple layer of crescent rolls blanketed around a fluf fy cream cheese mixture known as Sopopia Cheesecake.

Grandma's Turkey and Cornbread Dressing

GRANDMA'S CORNBREAD DRESSING STUFFED TURKEY Grandma's Cornbread dressing stuffed turkey is a whole baked turkey that is placed in a pan of cornbread dressing and then baked.  The best turkey and dressing you will ever eat.  And don't forget the giblet gravy. This is my Mother in law Betty's recipe.  When I came into the family, I was not used to eating turkey stuffed with cornbread dressing.  I grew up eating the turkey baked separately from the dressing.   It did not take me long to get used to eating the turkey and dressing stuffed.

Easy Beef or Venison Pot Pie {Using Pillsbury Pet-Ritz Crust}

  Beef or Venison Pot Pies,  a casserole under a crust my family describes it.  Long ago, the name  Pot Pie  came from cooking the filling in a pot on the stove and then pouring it into a crust to bake. Pot pies scream  comfort food at best!!  We are huge fans of pot pies around our house. You can make some of the best pot pies with leftovers.  One way to transform leftovers into pure goodness.

Mexican Pot Roast

Mexican Pot Roast  is a pot roast with a spicy twist. Most grocery stores carry all the ingredients, such as pork roast, jalapenos, Rotel tomatoes, and spices. MEXICAN POT ROAST Mexican Pot Roast is a recipe that offers many possibilities for weeknight meals, including burritos, tacos, enchiladas, and more. The holidays are just a few days away, and I wanted to share a great recipe to cook in a crockpot. With some of the b-u-s-i-n-e-s-s that come with the holidays, cooking dinner is sometimes hard to get done.   Around our house, my girls love to get in the kitchen a couple of days before Thanksgiving and make up a bunch, and I mean a bunch of pie crust for our Thanksgiving pies.   We even prepare some of our side dishes and freeze them for the big day. With all of that going on, it is hard to put a meal on the table, so I like to cook in my crockpot.

Stew in a Pumpkin {Baked and served in a pumpkin}

Baked Pumpkin Stew  is a flavorful beef stew cooked and served in a sugar pie pumpkin. When serving, raise the ladle up with the stew scraping the sides of the pumpkin being sure to get a generous serving of pumpkin.     A true taste of Fall! To celebrate the Fall, pumpkin is so hot these days, and almost anything can be made with it.  When I grew up in the 60s, pumpkin pie and pumpkin bread were the most popular recipes to make. These days that is not the case.

Crockpot Roast New Potatoes and Carrots {Has The Flavors of a Classic Pot Roast}

Crockpot Roast New Potatoes and Carrots  are one of the meals I cooked a lot while we were in the hotel this summer as our house was being repaired. Cooking in the crockpot is more out of convenience for me than anything else, but in the hotel, we didn't have an oven so, the crockpot was perfect. I usually put my roast in the crockpot before I go to bed at night and cook it on low all night. Get up the next morning and turn it to warm. And two or three hours before serving it, I put the potatoes and carrots in and turn to high. Don't you just love these one pot meals!

Jiffy Chili Cornbread Pie

Jiffy Chili Pie is  a one-pot wonder that satisfies the pickiest of eaters.   Use leftover homemade chili with your favorite cornbread recipe that is spread across the top. CHILI CORNBREAD CASSEROLE Chili cornbread casserole is a hearty, flavorful chili dish with a crumbly cornbread topping. You just mix up your favorite cornbread and pour it over the chili. How easy can it get? Jiffy Chili Pie is one of the recipes I make on cold days. It is so easy to make.  I used leftover homemade chili in the freezer, chopped onions, and a can of green chilies. I sandwiched all of that between two layers of prepared Jiffy Cornbread Mix.  You can have a meal on the table in a "jiffy."   Just had to say that...he he!

Easy Crockpot Mandarin Chicken

Easy Crockpot Mandarin Chicken is just what it says Easy!   I have been seeing this recipe circling around on Pinterest and knew I had to give it a try.  I did make a few changes to our liking.  It will definitely be making a regular appearance on our menu rotations. I love the ingredients in this recipe and added a few of my own.  I added onions and bell pepper to give it additional color and taste. You could add mandarin oranges or pineapple, but we prefer it with just the vegetables. Either way the flavors explode in your mouth, and you can't stop eating it. I also love the fact that I can make it in a crockpot.  I have always cooked most anything in the summer so using the crockpot for me is more out of convenience than anything. The one thing that I most favor about using a crockpot is you don't have to watch the stove when you cook.  You can go about doing other things while your meal is simmering away. Yes, the crockpot is...
