Coconut Banana Bread

I could make Coconut Banana Bread every day.  It has become one of my personal favorites.  I think it is the combination of the coconut, bananas, and butter that makes it so moist and yummy. Any Banana Bread recipe I come across, I am going to jump on it. That is exactly what happened with this recipe. A sweet friend of mine gave me a recipe for banana bread that does not call for any milk, sour cream, yogurt, etc. I have never seen a recipe that didn't call for some sort of dairy product. I couldn't wait to try it, and I am here to tell you that this is the moistest Banana Bread ever.

Cornbread and a Cold Glass of Milk

Baked Cornbread,  cut a slice and pour cold milk over it in a glass.  In the South this is poor mans food but no one ever knew it because it taste like your eating like a king! When I came into the Little family, I was used to eating Southern Buttermilk Cornbread . Needless to say the longer I was in the family, the more I began to have a taste for sweet cornbread. Traditionally, sweet cornbread contains equal portions of flour and yellow cornmeal with a liberal amount of sugar.  There is one thing that has not changed since I came into the family and that is my affection for a late night snack of a cold glass of Milk and Cornbread.

Classic Southern Buttermilk Biscuits Made The Old Fashioned Way + secrets to making them tall and fluffy!

Classic Southern Buttermilk Biscuits , tender, flaky biscuits made from scratch with a secret to making them tall and fluffy. These biscuits are easy to make and perfect for any meal of the day! Took off a day of cooking for my birthday yesterday. I had a wonderful day!!! My family splurged on me and made me feel very special.

Cheddar and Gruyere Cheese Bread Ring

The recipe for my Basic Potato Bread makes four loaves of bread, but I usually make three loaves of regular bread and use the fourth to make a cheese bread ring.

Basic Potato Bread

Basic Potato Bread , using leftover mashed potatoes will make soft fluffy white bread that slices perfect sandwich bread. There is nothing like the aroma of homemade bread coming straight from the oven. In my house there is no holding back, as soon as it comes out of the oven, the knife is ready to slice a big thick slice and immediately slather it with real butter. You have to eat it with both hands while the butter runs down the side of your face. Wow! Was I a little dramatic, or maybe more like was just telling the truth (grins). Needless to say, I don't have to tell you how much my family enjoys eating homemade bread. What I like most about this recipe is that it makes 4 loaves at a time. I use one piece of the dough to make my Cheddar Cheese Bread Ring and the other 3 pieces of dough I use to make regular loaves. This bread turned out to be a great accompaniment to a pot of Chunky Chicken Corn Chowder and Black-Eyed Pea and Kale Soup . Basic Potato Bread R...

Jalapeno-Cheddar Scones

Jalapeno Cheddar Scones , pillows of tender biscuit like bread with speckles of jalapenos and cheddar cheese running all through it.   As I was thinking about what to make to go with my Simply Venison Stew, I remembered seeing Jalapeno Cheddar Scones over at Kristen's blog, Blissful Bites.   They looked scrumptious.

Miss Kay's Heavenly Rolls

Miss Kay's Heavenly Rolls , my family affectionately calls my homemade rolls, pillows of pure heaven.  They make an appearance at all our family dinners. Mom's Heavenly Dinner Rolls Heavenly Rolls   are soft and airy, similar to a dinner roll, but the addition of baking powder gives them the structure  of a sturdy biscuit.   Yesterday, my grandson turned 13. I can't believe I have a teenage grandson and one who is taller than me. I was delighted and honored when he asked me to cook his birthday dinner. I asked him what he wanted me to cook for his dinner, and he said, "Steak and baked potato. Wow."    I told him, "You sound just like your Grandpa. He would have picked the same thing." (grin) It is a fitting meal for a grandson who has just crossed over a milestone in his life. To surprise him with an added touch to his meal, I decided to make my Heavenly Rolls , which he is so fond of. Some time back, I bought some cookie cutters with each gra...

Classic Southern Cornbread

Classic Southern Cornbread is the iconic bread of the South that has graced tables for generations.   GRANNY'S SOUTHERN CORNBREAD My Mother's recipe is simple and straightforward. It is cooked in an iron skillet using three must ingredients: bacon drippings, buttermilk, and yellow cornmeal.   About cornbread , I don’t want to expound on this too much for fear of stepping on some people's toes. People in the North like cornbread made with sugar, half cornmeal, and half flour. But the people in the South like their cornbread with cornmeal and a little flour, if any, and definitely no sugar. Also, southern cornbread is traditionally made in an iron skillet, giving it the desired crispy crust I like so much. I must say, my taste for cornbread has been swayed to somewhere in the middle because I actually like both recipes.  I go back and forth. Sometimes, I want the salty, tangy taste of my Mother's cornbread, and sometimes, I like the sweetness of the northern-st...

Mexican Cornbread & Spicy Pinto Beans

Allow yourself to indulge in the simplicities of life, like enjoying a bowl of beans with a slice of buttered cornbread.  Even better with a slice of Mexican cornbread. JALAPENO CORNBREAD AND PINTO BEANS Jalapeno Cornbread and Pinto Beans go together like chocolate and peanut butter.  One can be eaten alone and be fabulous, or together, and you have a win win combination. The weather is turning cooler here in Texas, where we are, and it has been raining a lot. So, my husband and I have been in the mood for beans and cornbread. Sometimes, I cook my beans with meat, and sometimes, I just cook what I call spicy beans without meat. Usually, I cook them in my crockpot overnight, which is a great way to avoid waiting for the beans to cook during the day.
