Peach Dumpling Cobbler is the first dessert I want to make as the peach season approaches.  We love my Double Crust Peach Cobbler recipe, but here lately the Peach Dumpling Cobbler has taken the first choice to make.  


They are both easy enough to make.  We just love the dumpling texture in the Peach Dumpling Cobbler.  

And really, the only difference between the two recipes is the Peach Dumpling Cobbler has 3 layers of crust instead of two, and 2 cups of boiling water is poured over the whole cobbler. 

This is where all the magic happens, tender sheets of dumplings.

Since the Peach Dumpling Cobbler is baked with water, I bake it in a deep oblong baking dish.

WHAT YOU WILL NEED TO MAKE PEACH DUMPLING COBBLER


  • Large 11x14 deep oblong baking dish

  • 3 sheets of pie crust to fit an 11x14 deep dish oblong baking dish

  • Rolling Pin

  • Fruit fresh

  • Peaches

  • Butter

  • Sugar

  • Vanilla






HOW TO MAKE PEACH DUMPLING COBBLER


  • Slice peaches in a large bowl and toss with fruit fresh and vanilla; set aside.

  • Mix flour, salt, shortening, and cold butter together with a pastry blender until well blended. Add water to the well blended flour mixture. Mix all ingredients together with a fork until they come together in a ball slightly.

  • Divide the dough into thirds. Roll one third of the dough on a lightly floured surface with a rolling pin large enough to place the sheet of dough into a large oblong dish and push the dough up the sides.  Place 1/2  of the peaches across the dough.

  • Roll one third of the dough on a lightly floured surface with a rolling pin large enough to place the sheet of dough onto the layer of peaches.   Place the other 1/2 of the peaches across the dough layer. 

  • Roll the last third of the dough on a lightly floured surface and place the sheet of dough over the top of the peach layer.

  • In a large saucepan, heat sugar,  butter, and water over medium heat until the butter melts.  Pour over the layers.

  • With a sharp knife, cut all the way through the cobbler diagonal across to the other side of the dish in strips.  Turn and cut in the opposite direction diagonally across the dish.  

  • Brush liberally with melted butter and sprinkle with coarse sugar and bake for 1 and 1/2 hours.
