Southwestern Mango Fruit Salad, {What Do You Think Makes This Salad Southwestern?}

Southwestern Fruit Salad came about from trying to come up with a fruit salad to go with a Southwestern Cornbread Salad that I was serving at r our church gathering.  


I just started with the lusciousness of fresh mangoes and went from there. For the dressing, I mix two parts lime juice with one part agave and added a little cayenne pepper to give it a little kick.

You don't want to leave off the queso blanco cheese either--try it, this is how the Mexicans finish their fruit salads.  So what do you think makes this a Southwestern dish, is it the cayenne pepper, the mangoes, or maybe the cheese?

All I know is the healthy and flavorful ingredients in this salad will blow you away!

Southwestern Mango Fruit Salad

  • 1/2 cup fresh lime juice
  • 1/4 cup agave
  • 1/4 teaspoon cayenne pepper
  • 2 15 oz. can tropical  fruit salad, drained
  • 4 cups fresh pineapple, cubed (about 1 medium)
  • 3 cups strawberries, hulled and sliced (about 1 1/2 pint)
  • 2 cups mangoes, sliced (about 2 large) see not below
  • 4 kiwifruit, peeled, haved lengthwise, and sliced (about 1 1/2 cups)
  • 1 cup queso blanco cheese, crumbled (or queso fresco cheese)

In a small bowl, mix lime juice and agave; set aside.  In a large bowl, combine tropical fruit salad and the next four ingredients.  Drizzle with the lime mixture; toss gently until well coated.  Serve with queso blanco cheese crumbled on top.

A "Little" Tidbit

To slice a mango use a vegetable peeler and start at one end and slice to the other end in the same place until you reach the seed.  Turn the mango and continue slicing until you have gone all around the mango.
