Mediterranean Style Tuna Salad

Mediterranean Style Tuna Salad is my new favorite dish!  Sometimes I just want to eat tuna salad that is with your classic traditional ingredients--onions, pickle relish, mayonnaise, and eggs. But this time, I want something that is so non-traditional for me.

I couldn't decide what to put in it, so I just leaned into my refrigerator and looked for what I had on hand, and I found several ingredients that I loved in other dishes, so I was on my way to my quest for a delicious tuna salad, Mediterranean no less.


Mediterranean Style Tuna Salad

Ingredients:  Salad

  • 1 6 oz. can tuna in olive oil
  • 1/4 cup kalamata olives
  • 1/4 cup purple onion, chopped
  • 1/3 cup sun dried tomatoes, packed in oil, sliced julienne
  • 1/2 14 oz. can quartered artichoke hearts, drained

Ingredients:  Dressing

  • 2 tablespoons white wine vinegar
  • 2 tablespoons sun-dried tomato, minced
  • 1/2 teaspoon coarse black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 small garlic clove, grated finely
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon parmesan cheese
Directions:  Salad
In a medium bowl, add the first 5 ingredients in the order listed and place it into the fridge to get cold until you're ready to serve.

Directions:  Dressing
In a small bowl, add in all of the ingredients, except the olive oil, and whisk it altogether to incorporate. Add olive and a light stream as you whisk altogether. . When you're ready to serve, toss most of the dressing with the salad and then taste. If you need more go ahead and add in the rest. Dressing makes 3/4 cup.
