Cookie Dough Truffles

10:10 AM

When I first heard about Cookie Dough Truffles, I thought, what a concept. When baking Chocolate Chip Cookies, who doesn't eat half of the dough before you can even get them on the baking sheets?

That would be me - I try, and I try, and I can't keep myself from eating the cookie dough right out of the bowl before I can get the first cookie sheet ready for baking.

I made some of these truffles for Christmas gifts this year, and I can genuinely say they are the gift that keeps on giving deliciousness!

Cookie Dough Truffles
Recipe Source:  Angela Lively of Baxter Tennessee
    1/2 cup butter, softened
3/4 cup firmly packed brown sugar
    1 teaspoon vanilla extract
    2 cups flour
1 (14 oz) can sweeten condensed milk
1/2 cup semi sweet mini chocolate chips
    1 cup finely chopped pecans
1 1/2 pounds of chocolate bark, melted
Cream butter and brown sugar with an electric mixer at medium speed in a large bowl until creamy. Add vanilla. Gradually beat in flour and add milk. Add chocolate morsels and pecans, mixing well. Shape into 1-inch balls. Place on waxed paper; chill for 2 hours.

Note: Since the dough is sticky, roll your fingers into flour. This will make it easier to roll. Melt chocolate bark candy coating in a double boiler. Using 2 forks, dip cookie balls into candy coating to cover. Place on waxed paper and chill to set. Store in the refrigerator for at least 1 hour.
