Waldorf Salad

The Waldorf Salad recipe is straightforward and delicious and can be made with ingredients from your pantry.  It is ready in 15 minutes and easy for family gatherings or potlucks.    Granny's Classic Waldorf Salad I have been making this classic Waldorf Salad recipe for the holidays and special occasions for years. The recipe comes from my Mother.  It is one of my favorite recipes growing up. The original Waldorf Salad was introduced on March 14, 1893, at the Waldorf Istoria Hotel in New York by the first executive chef for a charity ball and became an instant success.  In years since, the original recipe, which consisted of apples, celery, and mayonnaise, has taken on more additions.

Just like Mother, I keep this salad as simple as possible.  My family loves this salad year-round, especially around the holidays.   This brings up Thanksgiving around the corner, always a favorite.   I know this salad will become one of yours, too.

My spring salad has simple, fresh ingredients, asparagus, cucumbers, and chili peppers.  The salad is drizzled with a fantastic avocado lemon vinaigrette.  The dressing only takes minutes to make and adds so much freshness.

Magic Carrot Salad All the magic happens in these carrots when they are marinated in a sweet and sour mixture overnight yielding a delightful taste of my childhood. Magic Carrots are a unique side dish that brings memories of my childhood.   Back in the day when I was growing up, it seemed mother would bring these carrots out around the time spring came; to me, they screamed Easter.

Stain Glass Fruit Salad

Stain Glass Fruit Salad, fresh pineapple chunks, fresh strawberry slices, and fresh blueberries tossed all together in a strawberry pie filling, homemade or canned.    Light and fresh...who says it can't be for dessert!   The night before any celebration we are having, I make Celebration Salad.  I like another quick fruit salad  I make from my childhood using canned fruit, but this is our favorite. I try to use fresh fruit as much as I can.  Especially now, while the strawberries, pineapple, and blueberries are in season.   We have some that are not a fan of bananas in this salad, so we leave them out but feel free to add them along with any other fresh fruit.  I think Kiwi and grapes would be another delicious addition or even peaches.   If you add peaches, a homemade peach pie filling is a great combination.

How To Make The Best Roasted Little Tomatoes

Roasted Little Tomatoes , place little tomatoes on a rimmed baking sheet, lightly drizzle with avocado oil and give a generous sprinkle of coarse salt and pepper, cooked in the oven until caramelized.  Simply delicious! As soon as the holidays were over and I started back on the healthy eating plan I have been on since 2017, I knew I wanted some of these Roasted Little Tomatoes on my menu rotation.   They are super easy to make and a bonus, they are super delicious too!  haha! I like to roast these up and keep them in the refrigerator for a healthy snack, flavorful salad, in addition to a tasty hamburger and a topping over mini meatloaves.  I have found the ideas for the lovely jewels are endless.

So I added pomegranate juice and chopped dried cherries along with some chopped pecans for some crunch.

I would serve a one pot dish, like Shrimp Creole over buttered rice, green salad, and for dessert, we would have chocolate cake.  Oh, the memories are flooding in.  sniff sniff!

I love to dice leftover spiral ham.  The cuts are all uniform and the perfect thickness.  They look pretty in ham salad or a pasta dish like Leftover Ham and Bowtie Pasta.

Roasted Sweet Potato Cobb Salad, golden roasted sweet potatoes, chopped tomatoes, cucumbers, purple onions and avocados on a layer of fresh collard green ribbons and arugula salad greens and drizzled with honey dijon salad dressing.  I'm keeping it Southern! Do you ever have a few sweet potatoes needing to cook before they go bad?  Well, that is where I am, and two sweet potatoes are not enough to make a pie.   Now I could put them in a casserole or bake them, but that means lots of butter and cinnamon and sugar.  That's how I like my baked sweet potatoes, so I opted for a healthy version, roasted sweet potatoes.

I must say I just now have made this glorious salad.  I have been seeing it on the social media sites for several years and just never got around to making it.   Now I make it all the time.  It is fabulous.  I can't get enough of it.  My husband loves it, my grands love it, everywhere I take it they love it.
