Perfectly Baked Bacon, incredible way to cook bacon perfectly without all the fuss.  All it takes is a rimmed baking sheet pan lined with just parchment paper or a wire rack insert and bacon.

I first saw this method of cooking bacon over at my good friend Marsha's blog The Better Baker.   And I have been cooking bacon this way ever since.

I like to use parchment paper, so the bacon doesn't cook too crisp.  My husband is a fan of well-cooked limp bacon.  haha!  Me, on the other hand, I like my bacon well-cooked crisp bacon.

We find that cooking the bacon on the parchment paper gets the bacon somewhere in the middle for both of us.

If you like your bacon really crisp, then you may want to use the wire rack insert in the rimmed baking sheet pan.  The bacon grease falls to the bottom of the pan, and the bacon stays dry while cooking.



I used to dread frying bacon when company came for a visit.  Or even on weekends when we cooked a large breakfast.

One of my pet peeves when frying bacon is the ends start to curl up after halfway through the frying messing up the arrangement in the skillet.  It's hard to turn, and then the center get burned, and the fatty ends are all curled up.  I know that might seem trivial to you, but I want my bacon to lay flat and cooked evenly.

I like to start the bacon in a cold oven.  I never preheat the oven. To me, it just cooks better this way. I cook the bacon in two sheet pans if I am cooking for a large gathering and I just switch out the pans in between the baking time. And they cook perfectly.

INGREDIENTS:


  • 8 slices thick bacon

INSTRUCTIONS


  1. Line rimmed baking sheet with parchment paper. Place bacon strips onto the parchment paper. The bacon can be touching but not overlapping.
  2. Place the baking sheet with the bacon in the oven. Turn the oven to 400 degrees F.
  3. Bake bacon for 20 minutes.
  4. Remove cooked bacon with tongs and place on a plate lined with a paper towel. Serve warm.
  5. Cook's Note: For extra crisp bacon, place bacon on a wire rack insert in the rimmed baking sheet. Cook 5 minutes longer. The bacon can be baked ahead of serving. Just microwave for 30 seconds before serving. The bacon grease can be poured in a container and saved for other dishes. It also can be frozen in ice cubes and used as needed.
