I recently found this recipe I had pinned on Pinterest back in February of last year and have been meaning to make them for some time now.

WHAT YOU WILL NEED TO MAKE THE CHOCOLATE NO BAKE COOKIE BARS


  • Peanut butter

  • Honey

  • Coconut oil (use organic extra virgin coconut oil only)

  • Hershey Special Dark Chocolate Chips

  • Oatmeal (not instant)

  • Shredded coconut (unsweetened)

HOW TO MAKE CHOCOLATE NO BAKE COOKIE BARS



  • Add peanut butter, honey, and coconut oil in a large saucepan.  Heat over medium heat until smooth and creamy.

  • Remove from heat and add chocolate chips.  Stir until all the chips are melted.

  • Add 1 1/2 cups of oatmeal and coconut.  Stir until all ingredients are incorporated.  Add the remaining 1/2 cup of oatmeal if you want it a little thicker.

  • Pour into the prepared pan.  Refrigerate until the chocolate is hard enough to cut into bars.  It will take about an hour.

  • Lift out of the pan using the sides of the parchment paper.  Lay on a cutting board and cut with a sharp knife into bars.

  • Refrigerate and store any bars that are not eaten.  These bars will soften and lose their shape if left out too long.

I must say…I was a little skeptical at first when I started using it, but I am sold after using it in several recipes as a substitute for vegetable oil, butter, or even bacon grease.  

Much to my surprise, I do not taste coconut oil in recipes.  

It is like it is disguised as a mystery ingredient.  

It's what makes these bars so creamy, and you will want to use the organic unrefined coconut oil for the best results.

I need to tell you a little secret…you will not be able to eat just one of these bars.  Just saying…
