Luby’s Copycat Chocolate Cream Pie, a family favorite, dreamy, creamy delicious.  Pies can be fun to make and such an accomplishment when finished.  This pie is simple to make with little fuss, yet has a rich and intense chocolate taste and topped with sweetened whipped cream.

When I was growing up, Chocolate Cream Pies were made for nearly every get-together.

When it comes to making a delicious chocolate cream pie today, my daughter, Jennifer is the one everyone wants to make it.

The first dessert my daughter would choose when we go to Luby’s is chocolate cream pie.   This pie is a copycat of the Luby’s Cafeteria.

Chocolate cream pie has been one of my favorites for as long as I can remember.   Pies can be fun to make such an accomplishment when finished.  This pie is simple to make with little fuss.

First, start off with the crust.  We use a homemade pie crust, but a shortbread cookie crust is equally as easy.

And store bought will do just fine too.  Second, for the filling, I add all the ingredients in a microwaveable safe bowl except the butter and vanilla and microwave for 6-8 minutes stirring every 2 minutes.

Did I say this pie is quick and easy to make?

I love that this pie has a rich and intense chocolate taste and to balance out that, it is topped with sweetened whipped cream.

Sweetened Whipped Cream
    2 cups cold heavy cream

    1 teaspoon vanilla extract (optional)
Whip cream on medium-high speed using a hand-held or stand mixer until almost stiff.

Add confectioners' sugar and vanilla and whip until stiff.

Note:  Depending on how chocolaty you like your pie, I use heaping tablespoons of cocoa.

My daughter doesn't put the vanilla in her whipped cream for this recipe.
