I usually make a Mexican casserole out of crushed tortilla chips that are left in the bottom of the bag, but this time I decided to make a Mexican stack up in a pie dish. I just hate to throw those crushed chips away, and what else can you do with them? I got to thinking about how my daughter makes Mexican Stack Up for her family. She puts each individual ingredient in bowls, and everyone makes their Mexican Stack Up to their liking. So I decided that I would just layered all of them in one dish. To keep the chips in place I put a layer of cheese on top of them before I layered the meat and it work out great to get out of the pie dish. This is a dish I will definitely try again.
Mexican Stack Up
1 1/2 cups crushed tortilla chips
5 cheddar cheese slices
1 lb. lean ground beef
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 ground cumin
1 teaspoon chili powder
1 tablespoon taco seasoning
1 medium onion chopped, divided
1 garlic clove, minced
1 1/2 cups shredded lettuce
1 large tomato, diced
1 cup cheddar cheese, grated
1 avocado, sliced
1 pint sour cream
Preheat oven 375 degrees F. In a 8 inch pie dish, line bottom with tortilla chips, arrange slice cheese on top, set aside. In a medium skillet on high heat, brown meat, garlic, and 1/2 of the onions together. Add salt, pepper, cumin, chili powder, and taco seasoning. Cook meat well done and the onions are transparent. Dish hamburger on top of the sliced cheese and place in the oven for 10-15 minutes or until cheese is bubbly. Take out of the oven and layer with lettuce, tomato, remainder of the onions, grated cheese. Serve with a large spatula. Serve with sour cream and avocado slices. Serves 4-6.
