Easy Hamburger Pie with Sauteed Mushrooms

When I thought about what my husband and I were going to have for dinner tonight, I decided that it would not take long to make a hamburger pie. I usually use 1 pound of hamburger and bake my hamburger pie in a pie plate, but since I had 1 1/2 pounds of hamburger today, I thought this time I would use my round shallow Pamper Chef stoneware dish. I had some mushrooms in the refrigerator that needed to be cooked so I sauteed them in butter and added them on the top. Wow, for a last minute decision, this turned out to be so good. This is great served with creamed corn and a broccoli cold slaw.

The only thing is, before I realized it, we had eaten almost half of it, and I had not taken a picture. That just goes to show you how delicious it was.

Easy Hamburger Pie with Sauteed Mushrooms

1 1/2 lbs. lean ground beef
1/2 medium onion minced
1/2 medium bell pepper
2 eggs
1 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon ground coriander
1/2 teaspoon garlic powder
1/2 teaspoon ground red cayenne pepper
1 lb fresh mushrooms, sliced
2 tablespoons butter
1 tablespoons olive oil
2 cups cheddar cheese grated
3 cups cooked mashed potatoes

Preheat oven 375 degrees F. Mix well with the ground beef the next eight ingredients. Press meat mixture into a large pie plate. Bake for 35-40 minutes or until done. While the hamburger is in the oven prepare mushrooms.

Heat a large skillet on high heat. As soon as the skillet is hot, but not smoking, add the butter and oil. Once melted, add the mushrooms. Let the mushrooms cook over high heat until they release their moisture and turn golden brown. Toss the mushrooms from time to time so they color evenly. Once the mushrooms are golden brown, season with salt and pepper to taste.

When the hamburger is done top with cheese and then mashed potatoes and return to the oven for 20 minutes or until cheese is melted. Remove from oven, and top with mushroom. Serves 4-6.
